Nurse Fiona’s High protein power balls

Nurse Fiona’s high protein power balls are High in protein, vegan, gluten free, low GI, packed full of minerals (Selenium, Zinc, Magnesium), high in fiber and Omega 3 essential fatty acids. These nut & date based balls are quick and easy to make and can be stored in the fridge for up to 2 weeks.

Ingredients

  • 200g raw almonds
  • 200g raw walnuts
  • 200g medjool dates
  • 2tbsp cacao nibs or cacao powder
  • 2btsp coconut oil
  • 2bsp chia seeds

Directions

  • Add dry ingredients to a food processor. Almonds walnuts, chia seeds, cacao nibs
  • Blend until crushed
  • Add the dates and coconut oil and blend until fully mixed
  • Roll 1 Tbsp of mixture and roll into balls and lay out on flat tray
  • Place balls in freezer for 20 minutes
  • Remove from freezer, store in airtight container in the fridge.
  • Balls will last for 2 weeks
